sweet surprise muffins

these are a tasty breakfast, dessert, or snack with coffee/tea. use your favorite jelly, jam, or preserves...my favorite is my mom's homemade strawberry freezer jam.  click here for printable version.

2 eggs
1 cup milk
1/2 cup oil
3 cups flour
1 cup sugar
4 teaspoons baking powder
1 teaspoon salt

Preheat oven to 400*. Beat eggs. Add milk and oil. Mix remaining ingredients until moistened, batter will be lumpy. Fill muffin cups 1/3 full. Spoon 1-2 tsp jam on top of batter...


cover with batter to fill muffin cups 2/3 full. bake 20-25 minutes.
